Some sort their collection by species.
I prefer to sort by country.
Reason being that first off some stamps have images of more than one type, and secondly setting up pages becomes easier and looks more tidy.

Stamp types.
- Official issues. Stamps issued by postal authorities.
- Agency issues. Some countries with poor or no functioning postal services allow private agencies to issue stamps .
Few if any are used or even made available locally in the country of issue, even so they would be legal postage.
- Illegal issues. Unauthorised private printing, mainly aimed at exploiting the philatelic market.
- Local issues. Private printing which in some cases are used where official mail services are not available.
- Fantasy issues. Private printing with non existing or fictional country names.
- Labels. Purely decorative, often sold to aid charity.
Catalogue numbers.
Most numbers given are from Michel, as I find this the most complete and best organised.
Their catalogues lists both official and most of the agency issues.
For all other types the numbers are only for personal reference.
